Wild boar goulash with chocolate

Ingredients for 4 servings:

  • 800 g wild boar goulash
  • 200 ml olive oil
  • 30 g flour
  • 500 ml red wine, dry
  • 500 ml water
  • 1 garlic clove(s)
  • 200 g carrot(s)
  • 3 onions
  • 1 bay leaf
  • 10 g thyme
  • Salt
  • 3 cookies
  • 25 g dark chocolate
  • 20 g almonds
  • 10 ml olive oil
  • 2 garlic cloves

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 2 hours 30 minutes; Total time approx. 2 hours 50 minutes

Coat the wild boar goulash in flour and fry in olive oil in batches, then pat dry with a paper towel. Return it to the casserole dish. Cut the vegetables into fairly small pieces and add them along with 1 garlic clove. Pour in the red wine and water. Add the bay leaf, thyme, and salt and simmer over low heat for 2-3 hours. Grind the biscuits, chocolate, and almonds, mix with 10 ml of olive oil and 2 crushed garlic cloves. Stir in the mixture at the end of the cooking time. This dish is delicious with pasta or even just plain bread; a glass of red wine is a must.
