Wild Boar in Beer Sauce
The perfect wild boar in beer sauce recipe with a picture and simple step-by-step instructions.
- 1000 g Wild boar meat, from the leg or shoulder
- 0,3 l Beer, light
- 4 Carrots
- 4 Onions
- 0,5 pole Leek
- 100 g Rhubarb chutney, or some other fruity one
- 10 Juniper berries, ground
- 5 Toes Garlic
- 2 tsp Wild garlic pesto
- 1 Eß Mustard
- 4 Bay leaves
- 0,5 Tl Paprika, sweet
- 0,5 Tl Salt
- Cut the meat into larger cubes and place in a roaster.
- Prepare all the vegetables, wash, clean and cut, finely chop the garlic and add to the meat.
- Mix the beer with the mustard, chutney and pesto well, add the paprika, salt, bay leaves and juniper and pour everything over the meat. Let stand for about 3 hours to marinate.
- Then let it cook in the oven at around 190 degrees for 90 minutes. I sifted through the sauce, but didn’t thicken it.
- We also had Brussels sprouts and the carrots from the sauce.
