Wild Boar in Beer Sauce

The perfect wild boar in beer sauce recipe with a picture and simple step-by-step instructions.

  • 1000 g Wild boar meat, from the leg or shoulder
  • 0,3 l Beer, light
  • 4 Carrots
  • 4 Onions
  • 0,5 pole Leek
  • 100 g Rhubarb chutney, or some other fruity one
  • 10 Juniper berries, ground
  • 5 Toes Garlic
  • 2 tsp Wild garlic pesto
  • 1 Eß Mustard
  • 4 Bay leaves
  • 0,5 Tl Paprika, sweet
  • 0,5 Tl Salt
  1. Cut the meat into larger cubes and place in a roaster.
  2. Prepare all the vegetables, wash, clean and cut, finely chop the garlic and add to the meat.
  3. Mix the beer with the mustard, chutney and pesto well, add the paprika, salt, bay leaves and juniper and pour everything over the meat. Let stand for about 3 hours to marinate.
  4. Then let it cook in the oven at around 190 degrees for 90 minutes. I sifted through the sauce, but didn’t thicken it.
  5. We also had Brussels sprouts and the carrots from the sauce.
