Wild boar ragout in dark beer

Ingredients for 4 servings:

  • 1 kg game (wild boar ragout) from the young animal
  • 30 g clarified butter
  • Salt and pepper, from the mill
  • 1 tsp thyme, shredded
  • 1 bay leaf
  • 10 shallots
  • 1 garlic clove(s)
  • ½ liter of beer (dark beer)
  • 1 slice(s) bread(s), without crust
  • 1 tbsp jelly (currant jelly)
  • 1 tbsp mustard
  • possibly starch flour

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Brown the meat in clarified butter. Dice the shallots and brown them. Dice the garlic. Add them along with the thyme and bay leaf. Season with salt and pepper. Deglaze with beer. Crumble the bread and add it to the ragout along with the jelly and mustard. Simmer over low heat for about 2 hours. Season to taste and thicken with cornstarch if necessary.
