Wild boar slices in rosehip sauce

Ingredients for 2 servings:

  • 8 slices of wild boar loin
  • 3 tbsp extra virgin olive oil
  • 1 large garlic clove(s)
  • 1 tbsp soy sauce, dark
  • 1 pinch of cinnamon powder
  • 1 pinch of allspice powder
  • 1 tsp black peppercorns
  • 5 juniper berries
  • 1 small onion(s)
  • 1 tbsp clarified butter
  • Salt
  • 2 tbsp rosehip pulp (Hiffenmark)

Instructions

Working time approx. 15 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 30 minutes; Total time approx. 12 hours 45 minutes

Crush the peppercorns and juniper berries in a mortar and pestle. Mix the olive oil with the soy sauce and the spices. Grate in the garlic clove and add the crushed seeds/berries. Brush the mixture over the wild boar slices and let them marinate overnight in a bowl with the remaining marinade. Peel and finely dice an onion. Heat clarified butter in a pan and sear the meat slices until crisp. Add the onions as they turn and let them brown slightly. Dilute the remaining marinade with a little water, pour some of it over the meat, and let it reduce. Repeat this process until the diluted marinade is used up. Season the sauce with salt. Cover and simmer for about 15 minutes. Finally, stir 2 tablespoons of rosehip jam into the sauce to thicken it slightly. Serve on warmed plates with your desired side dish.
