Wild garlic cheese dumplings

Ingredients for 4 servings:

  • 4 slices of toast
  • 125 ml milk, warm
  • 200 g potatoes, cooked, cold
  • 80 g wild garlic
  • 2 eggs
  • 3 tbsp flour
  • 200 g Parmesan, grated
  • Fat, for frying
  • possibly breadcrumbs

Instructions

Working time approx. 30 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 50 minutes

Dice the toast and mix with the milk, let it sit for a while. Finely grate the potatoes. Finely chop the wild garlic. Squeeze the bread slightly, knead it with the potatoes, wild garlic, eggs, flour, and Parmesan cheese. Form the mixture into small dumplings (slightly larger than marrow dumplings) and fry them one after the other until golden brown. This takes about 1.5 minutes per dumpling. If the mixture is too soft, knead in some breadcrumbs. Lettuce goes well with the mixture. Tip: These dumplings can also be made with parsley or mixed herbs.
