Ingredients for 1 servings:

  • 50 g wild garlic flowers
  • 3 tbsp olive oil
  • 1 shot of elderflower syrup
  • 1 pinch of salt

Wild garlic flowers have a particularly delicate, slightly sweet garlic flavor, which is considerably milder than the taste of wild garlic leaves. Collecting the flowers takes a bit more effort, but it’s still worth making this paste once. It’s perfect for rounding out wild garlic soup or other soups and also goes well with cooked meat. Wash and dry the wild garlic flowers. Blend them with the elderflower syrup, oil, and salt using a hand blender until smooth. Pour into a gas stovetop and top with a little olive oil.
