Wild Garlic Gnocchi with Fried Asparagus

Ingredients
 

  • 100 g Wild garlic
  • 250 g Ricotta
  • 100 g Flour
  • 60 g Freshly grated Parmesan
  • 2 Egg yolk
  • Salt
  • Pepper
  • 500 g Fresh asparagus

Instructions
 

  • Finely chop the wild garlic and knead with the ricotta, flour, Parmesan and egg yolk. Season with salt and pepper
  • Shape the mixture into rolls and cut the gnocchi. Boil briefly in salted water until the gnocchi float on top. Skimming.
  • Peel the asparagus and cut into bite-sized pieces. Fry in clarified butter and season with salt and sugar.
  • Add the gnocchi to the asparagus in the pan and fry briefly
  • Serve with grated Parmesan on the plate. Yummy
