Ingredients
- 100 g Wild garlic
- 250 g Ricotta
- 100 g Flour
- 60 g Freshly grated Parmesan
- 2 Egg yolk
- Salt
- Pepper
- 500 g Fresh asparagus
Instructions
- Finely chop the wild garlic and knead with the ricotta, flour, Parmesan and egg yolk. Season with salt and pepper
- Shape the mixture into rolls and cut the gnocchi. Boil briefly in salted water until the gnocchi float on top. Skimming.
- Peel the asparagus and cut into bite-sized pieces. Fry in clarified butter and season with salt and sugar.
- Add the gnocchi to the asparagus in the pan and fry briefly
- Serve with grated Parmesan on the plate. Yummy
