Wild Garlic Gnocchi with Fried Asparagus

The perfect wild garlic gnocchi with fried asparagus recipe with a picture and simple step-by-step instructions.

  • 100 g Wild garlic
  • 250 g Ricotta
  • 100 g Flour
  • 60 g Freshly grated Parmesan
  • 2 Egg yolk
  • Salt
  • Pepper
  • 500 g Fresh asparagus
  1. Finely chop the wild garlic and knead with the ricotta, flour, Parmesan and egg yolk. Season with salt and pepper
  2. Shape the mixture into rolls and cut the gnocchi. Boil briefly in salted water until the gnocchi float on top. Skimming.
  3. Peel the asparagus and cut into bite-sized pieces. Fry in clarified butter and season with salt and sugar.
  4. Add the gnocchi to the asparagus in the pan and fry briefly
  5. Serve with grated Parmesan on the plate. Yummy
