Wild garlic paste

Ingredients for 10 servings:

  • 300 g wild garlic
  • 5 tbsp vegetable oil (preferably olive oil)
  • 1 tsp salt

Working time approx. 20 minutes; Total time approx. 20 minutes

Wild garlic for storage

Wash fresh wild garlic leaves and spin dry. Blend them with the remaining ingredients as finely as possible. Pour into jars and cover with a layer of oil. The wild garlic will keep for a good month this way. Just make sure that a layer of oil remains on top after removing the leaves. (This prevents oxygen from oxidizing the “green gold”). Alternatively, you can fill the paste into plastic bags and freeze the whole thing; it will keep well all year round.
