Ingredients for 4 servings:

  • 400 ml white wine
  • 200 ml water
  • 1 piece(s) lemon(s) – peel
  • ¼ stalk(s) cinnamon
  • 3 egg yolks
  • ½ tsp flour
  • 100 g croutons
  • 1 pinch of salt
  • 50 g raisins

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Bring the wine, water, sugar, lemon zest, and cinnamon to a boil. Meanwhile, whisk the egg yolk with the flour and a few tablespoons of cooking liquid and slowly add it to the cooking liquid. Stir continuously until the soup thickens and becomes foamy. Remove the lemon zest and cinnamon and add the raisins. Divide the croutons among the bowls and pour the soup over them. This soup can also be made with red wine.
