Ingredients for 5 servings:
- 60 g butter
- 60 g sugar
- some vanilla
- 1 egg(s), separated
- 90 g flour
- 1 tsp baking powder
- 60 g milk
- 2 tbsp cocoa
- 400 g silken tofu
- 200 g dark chocolate
- 70 g cream
- 2 strips of orange peel
- 1 star anise
- 6 carnations
- 1 cinnamon stick(s)
- 60 g butter
- 110 g flour
- 60 g sugar
- 2 tsp speculatius spice
- 200 g cream
- 60 g nougat
- 300 g cherry(s), frozen
- 1 tsp cornstarch
- Physalis
- powdered sugar
- some cherries
Instructions

Cream the butter with 40g of sugar. Add the egg yolks and vanilla. Stir in the flour, baking powder, milk, and cocoa powder. Beat the egg whites with the remaining sugar until stiff and fold in. Pour the batter into a baking dish and bake at 180°C for about 40 minutes. Let it cool. For the cream, bring the cream to a boil with the orange zest, star anise, cloves, and cinnamon. Let it cool and refrigerate overnight. Strain and puree with the silken tofu. Melt the dark chocolate over a bain-marie and stir in. For the crumble, melt the butter and knead it with the flour, sugar, and speculatius spice. Crumble the batter into crumbles on a baking sheet and bake for about 20 minutes, until the crumbs are lightly browned. For the nougat cream, melt the nougat over a bain-marie. Whip the cream until stiff and mix with the melted nougat. For the cherry sauce, thaw the frozen cherries and puree them. Press them through a sieve. Thicken with cornstarch, if desired. Cut out circles from the cooled cake base and place them in baking dishes. Fill with cream and, if desired, add chocolate chips or nuts. Freeze the cakes for 4-5 hours. Then cut them out of the rings and refrigerate. Serve the cakes, garnish with crumble, nougat cream, and cherry sauce. Decorate with physalis, powdered sugar, and cherries, if desired. Tips: The cream can also be made without tofu by simply using more cream. For an extra touch, chocolate leaves can be made from melted chocolate.
