Yeast Muffin with Homemade Pudding

The perfect yeast muffin with homemade pudding recipe with a picture and simple step-by-step instructions.

  • 500 g Yeast Muffin: Sifted flour
  • 1 cube Yeast fresh
  • 250 ml Buttermilk
  • 2 Eggs
  • 1 Protein
  • 1 packet Vanilla sugar
  • 80 g Sugar
  • 1 pinch Salt
  • 3 Homemade pudding: egg yolk
  • 50 g Sugar
  • 1 packet Vanilla sugar
  • 10 g Flour
  • 10 g Food starch
  1. Yeast Muffin: Put 500 g flour in a bowl, crumble the yeast and mix.
  2. 80 g sugar, 1 packet. Add vanilla sugar, 1 egg white, 2 eggs, 1 pinch of salt and 250 ml of buttermilk. Knead the dough and let it rise covered in a warm place (approx. 60-80 min).
  3. Homemade pudding: Beat 3 egg yolks with 50 g sugar until the mixture turns white and then 1 packet. Add vanilla sugar and keep beating until it becomes a homogeneous white mass.
  4. Add 10 g flour and 10 g cornstarch and whisk briefly. Add 250 ml milk and stir until it becomes a uniform mass without lumps.
  5. Now everything is heated on the stove until it becomes pudding-like through the constant stirring. Put the finished homemade pudding aside and let it cool down.
  6. Roll out the yeast dough on a floured work surface (approx. 50 X 40 cm) and distribute it evenly with the homemade pudding.
  7. Carefully roll up the dough and cut into 12 even pieces.
  8. Place the blanks in the paper cases of a 12-cup muffin pan, brush with 1 egg yolk and a little milk (whisk) and sprinkle lightly with sugar. Bake at 160 ° C O / U or fan oven for approx. 20 – 25 minutes.
