Zucchini and apple muffins

Ingredients for 1 servings:

  • 1 small zucchini
  • 1 apple
  • 200 ml orange juice
  • 170 g sugar
  • 40 g rapeseed oil
  • 300 g wholemeal flour
  • 1 tsp baking powder
  • 100 g raisins
  • e.g. cinnamon
  • e.g. vanilla

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

with raisins, vegan, for 12 muffins

Grate the zucchini and apple and mix with the sugar. Add the orange juice and oil, and season with vanilla and cinnamon, if desired. Mix the flour and baking powder and add to the zucchini mixture. Fold in the raisins. Pour the batter into muffin cups and bake in a preheated oven at 180°C for about 25 minutes.
