Ingredients for 1 servings:

  • 1 small zucchini
  • 2 potatoes, cooked, from the day before
  • 4 small tomatoes
  • 3 slices of medium-aged Gouda
  • some salt
  • Pizza seasoning
  • some butter

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Butter the bottom of a small baking dish. Slice the tomatoes and place them in the dish. Sprinkle with salt and pizza seasoning. Peel the potatoes and cut them into medium-thick slices. Wash and dry the zucchini, then cut them into medium-thick slices and season lightly with salt. Remove the rind from the cheese slices, if desired, and cut each slice in half lengthwise. Stack a zucchini slice, a potato slice, and another zucchini slice on top of each other and wrap each slice with a strip of cheese. You can secure the cheese tower with a toothpick if you like. But you can also do without it by placing the tower on one end of the cheese strip and then folding it up, crease the cheese slightly at the top. Use the same method to make as many towers as you want to eat. Place the towers on top of the prepared tomatoes in the baking dish and bake in a preheated oven at 190-200°C for approximately 20-25 minutes. Please do not add any additional seasonings, as the seasoned tomatoes and cheese will provide enough flavor. Of course, this dish isn’t just for leftovers; you can always increase the number of towers.
