Zucchini and potato vegetables

Ingredients for 3 servings:

  • 4 small zucchini
  • 4 small potatoes
  • 12 cherry tomatoes
  • 1 tbsp tomato paste
  • 1 tsp sambal oelek
  • 100 ml vegetable stock
  • olive oil
  • salt and pepper
  • some thyme sprigs

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Clean and wash the vegetables. Halve the cherry tomatoes, zucchini, and potatoes, and slice them. Sauté the zucchini and potatoes in olive oil, add the tomato paste, sambal oelek, and cherry tomatoes, and continue to sauté for a while. Then deglaze with the vegetable stock and season to taste. Cover and simmer for 15-20 minutes over medium heat. Shortly before the end of the cooking time, remove the stems from the thyme and add the leaves to the vegetables.
