Ingredients for 10 servings:
- 200 g sheep’s cheese (feta)
- 2 zucchinis
- 2 tbsp olive oil
- some apricot jam
- some rosemary sprigs
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
First, cut the feta piece lengthwise, then four times crosswise into 10 cubes. Wash and trim the zucchini, then cut lengthwise into approximately 0.5 cm thick slices (10 pieces). Heat olive oil in a pan and fry the zucchini slices in batches all over. Remove from the pan and drain well on kitchen paper. Spread each zucchini slice thinly with a little apricot jam, wrap each one in a feta cube, and insert a rosemary sprig vertically into the top to secure it (you can also use wooden skewers, or both). Arrange the zucchini and feta cubes on a platter and garnish with rosemary sprigs. The zucchini and feta cubes taste great with grilled food or as finger food with a glass of medium-dry wine.
