Ingredients for 4 servings:
- 100 g flour
- 2 eggs
- 50 ml milk
- 1 tbsp rapeseed oil
- ½ tsp baking powder
- salt and pepper
- 1 m.-large zucchini
- 6 carrots
- 2 tsp thyme, chopped (dried is also fine)

Mix the first 7 ingredients into a batter. Grate the zucchini and spread it on a paper towel to absorb the moisture. Grate the carrots as well. Mix the zucchini with the carrots and the chopped thyme and fold into the batter. Bake the pancakes in a pan.
