Ingredients for 3 servings:

  • 500 g zucchini
  • 2 tbsp vinegar (essence)
  • 2 tbsp sugar
  • 1 tsp salt
  • 1 large onion(s)
  • dill
  • pepper

Instructions

Working time approx. 30 minutes; Rest period approx. 3 days; Total time approx. 3 days 30 minutes

Let it steep for 3 days, keep for at least 4 weeks

Very large zucchini are best. Peel the zucchini thickly, scrape the skin, and cut into strips or pieces. Combine all ingredients and season with dill and pepper. Press down firmly. This releases the necessary liquid. Cover and let stand for 3 days. I use green dill and also a single head of dill. It keeps for about 4 weeks.
