Ingredients for 1 servings:
- 2 ½ kg zucchini
- ½ kg onion(s)
- 5 tbsp salt
- ½ liter vinegar (wine vinegar)
- 600 g sugar
- 1 tsp mustard seeds, ground
- 1 tsp turmeric
- ½ tsp nutmeg
- 1 ½ tsp celery salt
- ½ tsp white pepper
- 1 red bell pepper(s)
- 1 bell pepper(s), green

Deseed and dice the zucchini, and finely chop the onions. Place both in a bowl, sprinkle with salt, and let stand overnight. Then drain the broth, rinse briefly with cold water, and let drain. Bring the vinegar, sugar, and spices to a boil, then simmer the zucchini and onion mixture for 20 minutes. Finely chop the bell peppers and simmer for 10 minutes. Then fill everything into jars, seal, and let cool upside down. The zucchini salad is delicious cold with grilled food, roasts, or fried potatoes. Warm, it tastes great in turkey, for example. The number of servings depends on the size of the jars.
