Zucchini with cauliflower and minced meat filling

Ingredients for 4 servings:

  • 3 zucchinis
  • 400 g cauliflower
  • 200 g minced beef
  • 200g mozzarella
  • 2 onions
  • Spice(s), e.g. salt, pepper, garlic, Maggi

Instructions

Low carb, no added fat, light and delicious

First, cut the zucchini into thirds, then halve them and scrape out the excess moisture with a spoon. Thinly slice the mozzarella to make about 18 pieces. Chop or chop the onion. Cook the cauliflower and zucchini for about 10 minutes. Meanwhile, brown the minced meat, then add the finely chopped onions so they can fry in the fat from the meat without using any additional oil. Puree the cauliflower and then add the minced meat. Season to taste, e.g. with salt, pepper and a little Maggi. Fill the zucchini with the cauliflower and minced meat filling, then spread the sliced ​​mozzarella over it. Turn the oven on to grill or to 180°C and bake the whole thing for about 10 minutes so the mozzarella melts. We also added some basil for a slightly different flavor.
