Zucchini with eggs

Ingredients for 2 servings:

  • 2 m.-large zucchini
  • 1 m.-sized onion(s)
  • 4 large eggs
  • 1 tbsp, heaped dill
  • Oil for frying
  • Salt and pepper, white
  • Cherry tomatoes, halved, optional
  • 50 g feta cheese, shredded, optional

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Wash the zucchini, trim the ends, and coarsely grate the zucchini. Peel the onion and dice it very finely. Heat a pan with a little oil and fry the diced onion until golden brown. Add the grated zucchini, stirring constantly, and sauté for a few minutes to allow the liquid to evaporate. Finely chop the dill, add it, and mix again. Whisk the eggs well in a bowl and add them, continuing to mix until the eggs are set. Only then season the mixture with salt and a little more pepper. If you like, you can also add halved cherry tomatoes and feta cheese crumbs right at the end and mix well. Serve the dish with bread and salad or use it as a spread.
