Ingredients for 2 servings:
- 4 zucchini
- 4 garlic cloves
- olive oil
- 1 pack of feta cheese
- 250 g pasta, short, egPenne
- 1 lemon(s)
- salt and pepper
- Thyme, dried

wonderfully fresh pasta!
Cut the zucchini into very thin slices or strips. Finely chop the garlic. Finely crumble the feta cheese and squeeze the lemon. Cook the spaghetti until al dente. Two minutes before the end of the cooking time, add about 2 tablespoons of lemon juice to the pasta water. Heat the olive oil in a nonstick pan, fry the garlic briefly, then add the zucchini and cook for about 5 minutes. Add the remaining lemon juice, plenty of thyme, and a little salt and pepper. Season to taste. Mix with the pasta, serve on plates, and sprinkle the cold feta cheese on top. This is my favorite pasta! Quick, inexpensive, and wonderfully light and refreshing, especially in summer.
