Ingredients for 1 servings:

  • 1 roll, white, oval
  • 2 eggs
  • e.g. parsley or coriander
  • Sea salt
  • Pepper, from the mill

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Wash and finely chop the parsley. If desired, slice tomato, basil, or similar leaves for garnish. Cut the bread roll in half, but do not cut all the way through. Pierce the eggs and place them in boiling water. Boil small eggs for 6 minutes and large eggs for 7 minutes, depending on the size. Carefully break the eggs open with two forks so that the still-runny yolk runs over the bread roll. Season with salt and pepper, and sprinkle with parsley or cilantro. Serve as desired.
