The cup is a freely selectable unit of measurement in this recipe. It is important that the same amount of each of the seven main ingredients is used. So, cubes of boiled potatoes, peeled and cored apples, canned pineapple, oil-marinated herring, peeled onions, peeled, hard-boiled eggs, and gherkins are carefully mixed together. The salad is then dressed with the oil from the herring, a portion of pineapple juice, and a little cucumber broth to taste, and seasoned with salt and pepper. If you like, you can add chives or chopped parsley, or other herbs of your choice. The sky is the limit. The salad should be allowed to marinate for a while before serving. Two to three hours would be ideal. The salad is a good accompaniment to grilled food, or it makes a great addition to a picnic or cold buffet.
