Ingredients for 4 servings:

  • 1 tbsp butter
  • 1 tbsp flour
  • ¼ liter milk, cold
  • some salt and pepper
  • nutmeg
  • ½ lemon(s), juice only
  • 6 tbsp herbs, 7 varieties, finely chopped

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Melt the butter in a saucepan, add the flour and brown until golden brown. Add the milk and simmer over low heat for about 10 minutes. If the sauce is too thick, add a little more milk. Add herbs (such as parsley, chives, basil, dill, lovage, lemon balm, tarragon, borage, chervil, sage – to taste) and season with salt, pepper, nutmeg, and lemon juice. The sauce goes well with boiled meat and meatballs, and can also be mixed with cooked vegetables such as carrots or cauliflower.
