Ingredients for 1 servings:

  • 1 kg quark, any fat level is possible
  • 5 m.-sized eggs
  • 200 g sugar
  • 2 packs of pudding powder, vanilla or almond flavor
  • ½ lemon zest and the juice
  • 100 g breadcrumbs
  • 250 g whipped cream
  • 1 packet of vanilla sugar
  • 1 pack of cream stiffener
  • some red fruit compote, homemade if possible

Working time approx. 9 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 9 minutes

This cheesecake, which is baked without a crust, is ready to bake in less than 10 minutes, making it perfect for a quick treat. And combined with whipped cream and homemade red berry compote, it’s not just an eye-catcher but also a fantastic treat for the palate! 1. In a bowl, put the quark, eggs, sugar, 2 packets of pudding powder, and the juice and zest of half a lemon. Using the whisk attachment of a mixer, mix everything into a smooth batter. 2. Grease a 24-26 cm springform pan and sprinkle with breadcrumbs, pour in the batter and smooth it out slightly. 3. Now bake the cake at 175 degrees Celsius, fan oven 150 degrees Celsius, for about 1 hour. Cover with aluminum foil for the last 10 minutes if necessary. 4. Use a knife to loosen the baked cake from the edges of the pan. Leave the cake in the pan and let it cool on a wire rack. 5. Whip the cream with the whisk of a mixer, gradually adding the vanilla sugar and cream stiffener, until stiff peaks form. 6. Spread the stiffly whipped cream loosely over the cooled cheesecake and top with the red fruit compote. 7. Happy baking, and enjoy!
