Ingredients for 4 servings:
- 1 roll, stale
- 500 g minced meat, mixed
- 12 slice(s) cheese (Emmental or Gouda)
- 1 onion(s), chopped
- 1 garlic clove(s), chopped
- 3 tbsp parsley, chopped
- 2 eggs
- Salt
- pepper
- Paprika powder, sweet
- marjoram
- Breadcrumbs
- Clarified butter or oil
- 2 large tomatoes
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes
Soak the bread rolls, squeeze out excess moisture, and place them in a bowl with the minced meat. Finely dice 4 slices of cheese and add to the meat along with the onions, garlic, parsley, and eggs. Season with salt, pepper, paprika, and marjoram and knead well. Season to taste and form into 8 flat minced meat schnitzels (like meatballs). Coat in breadcrumbs (this gives them a wonderful golden brown color when fried). Preheat the oven to 200°C (180°C fan-assisted oven). Fry the schnitzels in hot clarified butter or oil on both sides. Transfer to an ovenproof dish with the cooking juices. Cut the tomatoes into 16 thin slices and place two slices on each schnitzel. Cover each with a slice of cheese. Bake in the oven until the cheese has melted. Sprinkle with parsley, if desired. This goes very well with mashed potatoes.
