Apple and potato noodles

Ingredients for 2 servings:

  • 300 g potatoes
  • 2 apples
  • 250 g pasta
  • 70 g mountain cheese, grated
  • 1 onion(s)
  • e.g. apple juice
  • Parsley
  • olive oil
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Wash the potatoes, cut them into cubes and boil them in salted water for 5-10 minutes until tender. Cook the pasta according to the package instructions. Wash the apples, cut them into cubes and drizzle with lemon juice. Peel and dice the onion. Briefly sauté the onions in a little olive oil, then add the apples and fry briefly. Deglaze with a little apple juice and simmer for about 5 minutes over medium heat. Add the potatoes, adding a little apple juice at a time, and season with salt and pepper. When all the apple juice has evaporated and a creamy sauce remains, add the pasta and cheese and stir well. Finally, chop the parsley and add it. Add a little more apple juice if necessary.
