Ingredients for 1 servings:

  • 125 g low-fat quark (cottage cheese)
  • 75 g butter, soft
  • 1 lemon(s), grated peel
  • 1 pinch of salt
  • 50 g sugar
  • 1 egg(s)
  • 250 g flour
  • 1 tsp baking powder
  • 2 tbsp raisins, washed
  • 3 tbsp milk
  • Coconut oil for frying, 1 kg
  • Powdered sugar for dusting

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Heat the fat to 175°C for frying. Drain the curd cheese. Mix the butter with the sugar and lemon zest, then add the salt, egg, and drained curd cheese. Sift the flour and baking powder together. Gradually stir in the milk and raisins to the curd cheese. Using a greased tablespoon of dough, cut out doughnuts and fry about 4-5 doughnuts at a time in the fat on both sides for 3-4 minutes. Remove from the pan and drain. Dust with powdered sugar. Makes about 20 doughnuts.
