Ingredients for 1 servings:

  • 400 g flour
  • Salt
  • e.g. milk or water
  • Fat
  • 500 g potatoes
  • 250 g quark
  • 400 g mountain cheese, Edam or grey cheese, spicy
  • some chives
  • 1 tbsp oil

Working time approx. 40 minutes; Total time approx. 40 minutes

Tyrolean festive dish

Knead flour, a little salt, and as much milk or water as needed into a firm dough. Long, vigorous kneading makes the dough smooth. Boil the potatoes and mash them while they are still hot. Then mix with the grated cheese, salt, chives, and a little oil. If necessary, add a little hot water until thickened. Shape the dough into a log and cut off pieces. Roll out each piece into a circle (approx. 10-20 cm in diameter) and fill each with 1 tablespoon of filling. Press the edges of the dough together firmly and fry the doughnuts in hot oil until golden brown. Then place them on kitchen paper to allow the oil to drain off.
