Chocolate oatmeal cookies with ginger

Ingredients for 1 servings:

  • 100 g dark chocolate drops
  • 100 g butter, soft
  • 250 g brown sugar
  • 1 tbsp vanilla sugar
  • 4 tsp ginger, freshly grated
  • 1 pinch of salt
  • 2 eggs
  • 300 g flour
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 125 g oat flakes, fine
  • 100 g almonds, chopped
  • 100 g raisins

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Grate the chocolate. Cream the butter until creamy, then gradually stir in the sugar, vanilla sugar, ginger, salt, and eggs. Combine the flour with the baking soda and baking powder and mix in. Add the chocolate, oats, nuts, and raisins and quickly knead with a dough hook. With lightly floured hands, form into walnut-sized balls. You can also roll out a snake and cut it into pieces. This is faster. Place them on a baking sheet lined with baking paper, leaving some space between them. Bake in a preheated oven at 160-175°C (gas mark 1-2) for approximately 12-15 minutes.
