Drömmar – Swedish biscuits

Ingredients for 1 servings:

  • 150 g butter, room temperature
  • 250 ml sugar
  • 1 tbsp vanilla sugar
  • 500 ml flour
  • 100 ml oil (not olive oil!)
  • ½ tsp ammonium bicarbonate

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Combine butter and sugar, add oil, flour, and baking powder, and knead into a dough. Form into walnut-sized balls and place on a baking sheet (greased or lined with baking paper). Bake for 20 minutes at 150°C on the middle rack. Let cool and serve or store in a container. Please note: I got the recipe from a Swedish woman; apparently, the sugar and flour aren’t weighed, but rather given in milliliters in the recipe. Personally, I made hazelnut-sized balls instead of walnut-sized ones. This meant the cookies weren’t quite as big.
