Ingredients for 1 servings:
- 150 g quark
- 4 tbsp oil
- 50 g sugar
- 1 packet of vanilla sugar (bourbon vanilla)
- 1 egg(s)
- ½ tsp salt
- 250 g flour
- 2 tsp baking powder
- 1,200 g plum(s)
- 2 tbsp sugar
- 150 g flour
- 65 g sugar
- 1 pinch of salt
- ½ tsp cinnamon
- 100 g butter
- some cinnamon

Quark-oil dough
Mix the quark, oil, sugar, vanilla sugar, egg, and salt. Mix the flour with the baking powder and add it gradually. As soon as the dough starts to pull away from the sides of the bowl, knead it quickly by hand. It should be relatively firm and elastic, but not sticky to your hands. In this case, you will need a little more flour. Then the dough needs to rest a little. In the meantime, wash the plums, halve them lengthwise, and remove the stones. Place the dough in a springform pan and pull up a rim about 2 cm high. Push the tips of the plums tightly into the dough. Mix 1-2 tablespoons of sugar and a little cinnamon and sprinkle over the top. For the crumble, mix 150 g flour, 65 g sugar, 1 pinch of salt, 1/2 teaspoon cinnamon, and 100 g butter and process to form a crumble. Sprinkle over the plums. Bake in a preheated oven at 175°C for about 40-45 minutes. This dough is great for fruit and crumb cakes, but also for savory cakes or pastries – but then leave out the sugar and vanilla sugar.
