Ingredients for 1 servings:

  • 150 g butter
  • 1 egg(s)
  • 80 g brown sugar
  • 1 tsp vanilla extract
  • 200 g flour
  • 1 pinch of salt
  • 25 g butter
  • 45 g brown sugar
  • 450 g condensed milk, sweetened
  • 1 tsp vanilla extract
  • 100 g cashew nuts, salted

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Preheat oven to 180°C (top/bottom heat 150°C fan/convection oven, gas mark 3). Dough: Beat the softened butter until smooth. Stir in the egg, sugar, a pinch of salt, and vanilla extract. Fold in the flour and knead into a smooth dough. Press the dough into a 22 x 22 cm baking dish with high sides lined with baking paper. (Separate larger dishes with several folds of aluminum foil.) Bake on the middle shelf for 20 to 25 minutes. Topping: Bring the butter, sugar, vanilla extract, a pinch of salt, and the condensed milk to a boil in a small saucepan, stirring constantly. Let it thicken for about 5 minutes. Then stir in the chopped cashews. Spread the mixture evenly over the pre-baked dough and bake for another 12 to 15 minutes at the same temperature. Let the toffees cool in the dish, then cut into approximately 60 cubes.
