Ingredients for 1 servings:
- 125 g butter
- 125 g peanut butter, salted (Pindakaas)
- 120 g sugar, white
- 120 g brown sugar
- 1 egg yolk
- ¼ tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt
- 150 g flour
- 50 g sesame seeds

Cream both types of butter until fluffy. Gradually stir in the sugar. Add the egg yolk and mix. Combine the flour, baking powder, baking soda, and salt. Sift into the mixture and stir in. Refrigerate the dough for about 2 hours. Then form small balls and roll them in the sesame seeds. Place the balls on a baking sheet lined with baking paper and flatten slightly with your thumb. Bake the cookies in a preheated oven at 160°C (320°F) on the second rack from the bottom for about 12-15 minutes until golden brown. This amount of dough makes enough for 50-60 cookies. Tip: I use Dutch pindakaas, which is salted peanut butter. It will also work with the specified sugar amounts. Otherwise, if using sweetened peanut butter, it’s a good idea to reduce the amount of sugar.
