Fig sauce à la Gabi

Ingredients for 4 servings:

  • 150 g shallot(s), cut into wedges
  • ½ tsp coriander, ground
  • 5 g ginger root, peeled and finely chopped
  • 3 figs, each approx. 80 g, cut into 2 cm cubes
  • 1 tbsp oil
  • 1 tbsp sauce (hoisin)
  • 100 ml dry sherry
  • 2 tbsp soy sauce
  • 50 ml water
  • e.g. salt and pepper
  • 1 tbsp lemon juice

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Heat 1 tablespoon of oil in a saucepan and sauté the shallots, ginger, and coriander over moderate heat for 30 minutes until softened. Add half of the figs and the hoisin sauce, then deglaze with sherry, 1 tablespoon of soy sauce, and 50 ml of water. Simmer for another 10-15 minutes. Add the remaining figs 5 minutes before the end of the cooking time. Season with salt, pepper, and lemon juice and let cool.
