Poppy seed – cranberry – marzipan – cookies

Ingredients for 1 servings:

  • 150 g marzipan
  • 100 g butter
  • 200 g flour
  • 75 g sugar
  • 50 g poppy seeds
  • 3 drops of butter-vanilla flavoring or 1/2 packet of vanilla sugar
  • 1 pinch of salt
  • 1 m.-sized egg(s)
  • Cranberries from the jar
  • possibly bitter almond flavor

Working time approx. 30 minutes; Total time approx. 30 minutes

Not just delicious at Christmas!

Finely grate the marzipan; it’s best to chill it first. Mix the butter with the egg, sugar, salt, and vanilla extract, then stir in the flour, poppy seeds, and marzipan. Knead the dough into a ball. Shape the dough into rounds about 3 cm in diameter and cut 2 cm thick slices. If the dough is too sticky, chill briefly. Place the slices on the baking sheet and use your finger to make small indentations in the center, but don’t press all the way through. Place a dollop of cranberries into each indentation. Bake at 180°C (top/bottom heat) or 160°C (fan oven) for 20-25 minutes, checking frequently to ensure the cookies aren’t overcooked. Depending on your oven, the baking time may be shorter! If you like, you can add a little bitter almond extract to the dough, but it’s not necessary.
