Ingredients for 4 servings:
- 2 tbsp olive oil
- 1 m.-sized onion(s)
- 1 m.-sized apple, sweet
- ½ banana(s), sweet
- 1 small can of tomatoes, chopped
- ½ tube(s) Tomato paste, triple concentrated
- 300 ml water
- 1 tsp salt
- pepper
- nutmeg
- Paprika powder, sweet
- 2 tbsp basil, finely chopped
- e.g. garlic, fresh or garlic powder

Heat the oil in a deep saucepan. Finely chop the onion and brown it lightly. Wash the apple and chop it with the skin. Chop the half or small banana. Briefly heat the fruit and onions. Add 50-100 ml of water and simmer for 5 minutes. If you like, you can add some fresh garlic at this point. Puree with a hand blender. Add the chopped tomatoes from the can. Stir in the tomato paste, fill the can halfway with water, and pour this into the saucepan. Stir, bring to a boil, and simmer for a few minutes longer. Add a little hot water to achieve the desired consistency. Season to taste with salt, spices, herbs, and garlic powder, if desired. The sweetness from the fruit replaces the sugar needed when using tomato paste. If it’s still too acidic for you, you can add a pinch or two of baking soda. The sauce goes well with pasta, gnocchi, and rice.
