Sarah's Mushroom One-Pot Pasta

Ingredients for 2 servings:

  • 100 g whole wheat spaghetti or other pasta
  • 300 g mushrooms
  • 100 g cherry tomatoes
  • 1 spring onion(s)
  • 5 tbsp soy cream (soy cream cuisine)
  • 500 ml vegetable stock
  • e.g. salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

vegetarian, easy, quick, healthy

Slice the mushrooms, tomatoes, and onion. Add the vegetables and noodles to a pot with the boiling vegetable broth. Press the noodles into the liquid and simmer with the lid closed for about 12 minutes. Add the soy cream and season with salt and pepper. Simmer briefly again and serve.
