Ingredients for 1 servings:

  • 750 g apples, peeled and pitted
  • 200 g brown sugar
  • 100 g raisins
  • 2 tbsp rum
  • 500 g flour
  • 1 ½ packets of baking powder
  • 1 tbsp cocoa
  • ½ pack of gingerbread spice
  • ½ tsp cinnamon
  • 100 g almond(s), whole peeled
  • Margarine and breadcrumbs for the mold

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Cooking/baking time approx. 45 minutes; Total time approx. 1 day 1 hour 15 minutes

Coarsely grate the peeled and cored apples, sprinkle with brown sugar, and let stand overnight. Pour rum over the raisins and let them stand overnight. Knead the flour, baking powder, cocoa powder, gingerbread spice, cinnamon, almonds, apples, and raisins into a dough. Pour the dough into a greased, breadcrumb-coated large bread pan or divide it between two loaf pans. Bake in a preheated oven at 200°C (top and bottom heat) for about 45 minutes.
