Ingredients for 1 servings:

  • 1 pack of puff pastry, from the refrigerated section
  • 200 g marzipan, sliced
  • 50 g breadcrumbs
  • 800 g plums, quartered and pitted
  • 2 tbsp sugar
  • 1 tsp cinnamon powder
  • 50 g sugar
  • 50 ml apple juice
  • Fat, for the shape

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

Mix the sugar with the cinnamon powder. Roll out the puff pastry and place it in a greased 28 cm springform pan. Cover the pastry with marzipan slices and sprinkle with breadcrumbs. Arrange half of the plums on top and sprinkle with the cinnamon sugar. Bake in a preheated oven at 200°C for about 15-20 minutes. Caramelize the sugar in a pan, deglaze with apple juice, add the remaining plums, and cook until a purée forms. Spread the plum purée over the cake while it’s still hot and let it cool.
