Juicy apple fruit bread

Ingredients for 2 servings:

  • 200 g fig(s), dried
  • 100 g apricot(s), dried
  • 100 g plum(s), dried
  • 250 g raisins
  • 150 g hazelnuts, whole
  • 750 g apples, coarsely grated
  • 75 ml rum
  • 1 tbsp spice mix (cinnamon, clove(s), nutmeg / allspice)
  • 250 g sugar
  • 300 g flour (wheat flour)
  • 200 g flour (rye flour)
  • 1 packet of baking powder
  • 2 tbsp cocoa powder
  • 1 egg(s)
  • some flour for dusting

Instructions

Working time approx. 55 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 55 minutes

Cut the dried fruit into medium-sized pieces and mix with the grated apples, hazelnuts, spices, sugar, and rum. Cover and let this mixture stand for about 12 hours. Mix the wheat flour with the rye flour, baking powder, and cocoa powder. Add to the fruit along with the egg and knead well. Add a little more flour if needed. Divide the dough into two pieces and shape into loaves. Lightly dust each loaf with flour, place on a baking sheet, and bake in a preheated oven at 180°C – 200°C for about 1 to 1.5 hours. Wrapping the loaf in aluminum foil for a few days will intensify its flavor.
