  • 125 g butter
  • 100 g almond butter
  • 2 tbsp oil (almond oil * or other nut oil)
  • 160 g powdered sugar, made from raw cane sugar
  • 1 egg(s)
  • 180 g spelt flour
  • 50 g cornstarch

Instructions

Gently melt the butter, add the almond butter and ground raw cane sugar. Add a little almond oil. Make a smooth dough. Beat in the egg well. Add the flour and cornstarch and beat the dough until smooth. Form cherry-sized balls from the dough and place them 2 cm apart on the baking sheet. Flatten the balls with a fork to create a nice pattern. If you prefer very sweet pastries, you should use more sugar. Preheat the oven. Bake the cookies at 180 degrees Celsius for about 10 minutes, depending on the size. The cookies will be soft and moist on the inside. You will make 24 cookies, so one baking sheet. * Almond oil sometimes settles in the almond butter in the jar, which can make the nut mixture too dry for baking.
