Chicken breast wrapped in bacon

Ingredients for 2 servings:

  • 2 chicken breasts
  • 200g bacon
  • 2 slices of cooked ham
  • 200 ml whipped cream
  • 200 g crème fraîche
  • 1 red bell pepper(s)
  • 1 bell pepper(s), yellow
  • 1 jar mushrooms, alternatively fresh
  • 1 onion(s)
  • 250 ml hollandaise sauce
  • 200 g cheese, grated
  • salt and pepper
  • Paprika powder

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Dice the peppers and onions and set aside. Cut each chicken breast lengthwise down the middle almost to the edge and open it up. Season with the spices and add the cooked ham. Then fold the meat shut and wrap it in bacon. Brown it well in plenty of fat and place it in a baking dish. In the same fat, brown the vegetables and season with salt and pepper. Spread the browned vegetables in the baking dish. In a pan, mix the hollandaise sauce with the crème fraîche. Add a little cream. Season well. Pour the sauce over the meat and vegetables in the baking dish and sprinkle with the cheese. Place in the oven at 180°C (convection oven) for 20 to 25 minutes. I served it with pasta.
