Ingredients for 1 servings:

  • 150 g spelt flour
  • 50 g wheat flour
  • 150 g sugar
  • 150 g butter
  • 1 lemon(s), untreated, zest
  • 1 pinch of salt

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Makes about 30 cookies

In a bowl, combine the flour with salt, 100 grams of sugar, and the lemon zest. Then, combine with the room-temperature butter to form a crumble. Pour the crumble into a springform pan and press it firmly into the bottom. Chill the pan for one hour. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Place the springform pan in the oven for 20-30 minutes and bake until golden brown. While still warm, cut out the shortbread into the desired shape, sprinkle with the remaining sugar, and let cool.
