Ingredients for 1 servings:

  • 250 g flour
  • 100 g oat flakes, fine
  • 2 tsp baking powder
  • 1 pack of sugar (orange sugar, 10g) alternatively fresh finely grated orange peel (untreated)
  • ¼ tsp salt
  • 120 g butter
  • 150 g brown cane sugar
  • 1 egg(s)
  • 250 g pumpkin flesh
  • 100 g apricot(s), dried, diced

Working time approx. 30 minutes; Total time approx. 30 minutes

Steam the pumpkin flesh until soft and then blend it finely with a hand blender. In a bowl, combine the sifted flour with salt, baking powder, and oats. In another bowl, combine all the remaining ingredients with a hand blender. Stir the mixture into the flour mixture until a smooth batter forms. Using a tablespoon, place small mounds of dough onto a baking sheet lined with baking paper, flatten slightly, and bake in a preheated oven at 175°C (convection oven) for about 15 minutes. This amount of batter made two baking trays of cookies.
