Chocolate meringue sheet cake

Ingredients for 1 servings:

  • 250 g margarine
  • 140 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 2 tbsp brown rum
  • 4 eggs
  • 140 g flour
  • 1 tbsp cocoa powder
  • 2 packs of chocolate pudding powder
  • 1 tsp, heaped baking powder
  • 3 egg whites
  • 120 g sugar
  • 1 packet of vanilla sugar
  • 4 drops of bitter almond flavor

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Preheat the oven to 175°C (top/bottom heat). Grease a 30 x 40cm baking tray. For the batter, beat the margarine, sugar, vanilla sugar, and salt with the whisk of a hand mixer until fluffy. Gradually stir in the rum and eggs and continue beating for a few minutes. Mix the flour, baking powder, cocoa powder, and pudding powder and sift them in. Briefly stir in. Then spread the batter on the baking tray and bake for about 10 minutes. Meanwhile, beat the egg whites with a pinch of salt until stiff peaks form and slowly add the sugar, vanilla sugar, and bitter almond extract. Spread the beaten egg whites evenly over the cake and bake for another 15 minutes, until the meringue is light golden yellow.
