Chocolate Banana Muffins

Ingredients for 18 servings:

  • 200 g flour
  • 2 tsp baking powder
  • ¼ tsp ground cinnamon
  • 3 tbsp cocoa powder
  • 1 egg(s)
  • 125 g brown sugar
  • 100 ml oil, neutral
  • 125 ml buttermilk
  • 3 bananas, very ripe

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Prepare the muffin tin (with or without paper baking cups): Combine the flour, baking powder, cinnamon, and cocoa powder in a bowl. Whisk the egg with the sugar, then add the oil and buttermilk and mix. Mash the ripe bananas with a fork and add them, then gently stir in the flour mixture. Pour the batter into the muffin tin and bake in the preheated oven at 160°C (320°F) for about 25 minutes. If you like, you can decorate the cooled muffins with melted chocolate.
