Banana muffins with icing

Ingredients for 18 servings:

  • 280 g flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 3 banana(s), ripe
  • 110 g butter
  • 2 eggs
  • 210 g sugar
  • 2 tbsp milk
  • 1 packet of vanilla sugar
  • 110 g cream cheese (double cream)
  • 50 g butter, soft
  • 1 packet of vanilla sugar
  • 190 g powdered sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 175°C. Line the muffin tin with paper baking cups. Sift the flour into a bowl. Add the baking soda and baking powder and mix everything together. Peel the bananas, mash them well, and place them in a bowl. Melt the butter, add the eggs, sugar, milk, and vanilla sugar, and mix everything well. Gradually add the flour mixture and stir until a smooth batter forms. Divide the batter evenly among the muffins and bake for about 20 minutes until golden brown, then let cool. Meanwhile, for the spread, mix the cream cheese with the butter and vanilla sugar, sift in the powdered sugar and mix well. Spread the spread on the cooled muffins and serve.
