Ingredients for 1 servings:

  • 220 g flour
  • 120 g butter
  • 60 g sugar
  • 1 egg yolk
  • 1 pinch of salt
  • 1 kg apples
  • 250 g milk
  • 250 g cream
  • 70 g butter
  • 50 g sugar
  • 2 eggs
  • 2 egg yolks
  • 40 g starch flour

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Combine flour, butter, sugar, egg yolks, and salt in a bowl and knead into a smooth dough. Cover and let rest in the refrigerator for about 30 minutes. Line a greased 26 cm springform pan with the dough, creating a 2 cm edge. Wash and peel the apples, core them, and quarter them. Place them close together on the dough base. Heat the milk, cream, butter, and sugar, stirring constantly. Combine the eggs and egg yolks in a bowl, stir in the cornstarch, add the milk and cream mixture, and bring to a boil, stirring constantly. When the mixture has set, pour it over the apples. Place on the bottom rack of the preheated oven; bake for 45 minutes at 190°C.
