Ingredients for 1 servings:
- 400 g flour
- 200 g butter
- 3 egg yolks
- 100 g sugar
- 1 packet of vanilla sugar
- 1 lemon(s), the juice
- 1 lemon(s), zest, grated
- 50 g hazelnuts, grated
- ½ cup(s) jam (strawberry jam)
- ½ cup(s) powdered sugar
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Sift the flour onto a baking board and spread the butter in small pieces on top. Add the egg yolks, sugar, vanilla sugar, lemon zest, and nuts to the center and knead all the ingredients into a shortcrust pastry. Wrap the dough in aluminum foil and let it rest in the refrigerator for 2 hours. Preheat the oven to 200 degrees Celsius. Roll out the dough in portions on a floured surface and place the cookies and rings on a baking sheet. Bake on the middle rack for 10 minutes until golden brown. Carefully lift the cookies from the baking sheet with a knife and let them cool on a wire rack. Mix the jam with lemon juice. Sieve the rings with icing sugar. Spread the jam on the round cookies and place a ring on each cookie.
